Soul sent me this a while ago:

Ingredients: plantain, 2 ounces seafood (a few shrimp, crayfish and mussells) 1 red pepper and 2 pitta bread (from the sainsbury/tesco/asda pack range, each pack contains 6 portions) some rocket leaf.

Cut plantain into 4 sections and boil till soft (no more than 10 - 15mins)slice red pepper into thin strips heat a frying pan and pour the seafood mix into it as well as the sliced red pepper heat for a few minutes (no oil is required)take 2 portions of the plantain, mash up and put half the seafood/red pepper mix in. Slice open the pitta bread and put mixture in, add rocket or any other green leaf salad to suit.


My verdict: I loved it... something different for lunch :-) If you by very ripe plantain, it's even better.

Add any spice you desire(lol!)...

The seafood is not cooked yet, you know shrimps cook in a few minutes... I did not use mussels though (don't think i have tasted them... LOL!!!)

@ToyinE Rocket is a lettuce-like vegetable so you can use lettuce instead.

And yeah, how's your running going?

erm..
ladies... I need some comission for my recipe!! lol..
oh and the beauty of rocket leaves is that they are actually peppery so you don't really need to add pepepper to a salad if you use rocket.
